CHEESY SPINACH TAQUITOS – It’s crazy how something so basic can make me so ridiculously over-the-moon happy. The moment you add cheese to spinach, my favorite veggie, it turns into the ultimate comfort food.
Cheese is magic.
When you wrap that magical concoction up in a tortilla and bake until you can see the cheese oozing out the ends. That is true love.
They’re easy to make using frozen spinach, cheddar, chopped red onion and a little cream cheese, the glue to hold everything together.
You roll the filling up in corn or flour tortillas, brush with a little melted butter and bake. You can also pan fry them, my preferred method, in a little oil. They’re even crispier this way.
You can add to the filling – corn – cooked chicken – tomatoes – artichokes for a play on the famous dip – use a different kind of cheese – throw in some pepper jack to spice things up or a little cayenne or hot sauce.
I like them just like this, kind of on the plain side with spinach as the star.
