For this recipe, you can use leftover taco beef. You can even double or triple the batch of taco meat and keep it in the freezer for a super quick meal excellent for busy weeknights!
1 medium-large head of iceberg lettuce, chopped into bite-sized pieces
1 (1.25 ounces) packet of reduced sodium taco seasoning
1 pound 95% lean ground beef
4 ounces 50% less fat sharp cheddar cheese, shredded (like Cabot)
1 medium-large tomato, diced
1 c. light Catalina or French dressing – I used Kraft Lite Catalina
4 ounces nacho cheese Doritos, broken up a bit into bite-sized pieces
How to make Dorito Taco Salad:
Step 1: In a skillet, cook the ground beef over medium heat until browned, breaking the meat into pieces using a wooden spoon as it cooks. Next, add the packet of taco seasoning. Stir well until the meat is coated and set aside.
Step 2: Place the lettuce in a large serving bowl along with the tomatoes, cheese, and ground beef. Toss well until combined.
Step 3: Before serving, toss in the Doritos and dressing until everything is well coated. Enjoy!
