HARD-BOILED EGG STUFFED MEATLOAF

Hellooooo. . . remember me? I haven’t forgotten you! Let’s get reacquainted. I’m the girl who loves a good meatloaf. This one is kind of special because it has hard-boiled eggs baked into it.

In case you didn’t know – I moved house. I’ve been getting acquainted with my new stove. It sucks. I burnt two meatloaves. Turns out any temperature above 350 sends it skyrocketing up to 450 degrees and higher. Anything below 350 turns it completely off.

So. . . I had to turn it off and then back on every few minutes to try and regulate it. It took over an hour to cook a meatloaf and it was still black on the bottom. Fun times.

Did I eat it anyway? You betcha.

The meatloaf is my go-to recipe with egg, ketchup, seasoned bread crumbs, worcestershire, onion, bell pepper and seasonings. I like to cover the top with more ketchup – it caramelizes and turns into a glaze that is one of my favorite parts.

Half the meatloaf mix is formed into a flat loaf, the eggs are set on top and the remaining meatloaf is piled on top and patted into shape. It looks pretty when you slice it and kind of fancy too.

I wished for bacon to drape over the top when I was making it. . . That is the only thing that could possibly make it better.

HARD-BOILED EGG STUFFED MEATLOAF

Ingredients

  • 1 + ½ pounds ground sirloin or 85% lean ground beef
  • 1 large egg
  • 3 tablespoons ketchup plus more for the top
  • 1 teaspoon worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • teaspoon garlic powder
  • ½ cup seasoned bread crumbs
  • ¼ cup diced onion
  • cup diced bell pepper I used yellow ones
  • 3 hard-boiled eggs peeled

Instructions

  • Preheat the oven to 400 degrees F. Grease a 9x13 baking or roasting pan.
  • In a medium bowl whisk the egg, ketchup and worcestershire together.
  • Add the ground beef and all the rest of the ingredients except the hard-boiled eggs.
  • Use a fork to mix it together just until combined.
  • Add half to the pan and form it into a long, flat loaf about 2 inches thick.
  • Place the eggs lengthwise on the meat and then spoon the rest of it on top.
  • Use your hand to pat it into a loaf, gently packing it down around the eggs.
  • Cover the meatloaf in a thin layer of ketchup.
  • Bake 45 minutes. Let it sit 5 minutes before slicing.
