2 lbs Italian sausage links (approx. 8-10 sausages)
1 large onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
2 garlic cloves, minced
Salt and pepper to taste
1 tsp Italian seasoning
1/4 tsp red chili flakes (optional for added heat)
2 cups marinara sauce
1 tbsp fresh parsley, roughly chopped (for garnish)

Preparation: In the slow cooker, combine Italian sausages, the trio of thinly sliced bell peppers (green, red, and yellow), onions, minced garlic, salt, pepper, Italian seasoning, red chili flakes (if you prefer a bit of heat), and marinara sauce.

Mixing: Stir all the ingredients together, ensuring they are well combined.

Cooking: Cover the slow cooker and set it on High for 3-4 hours. If you’re not in a hurry, you can cook on Low for a longer time of 6-8 hours.

Slicing and Mixing: Once done, remove the sausages from the cooker and slice them into generous pieces. Mix these slices back into the crockpot, allowing them to absorb some of the sauce and flavors.

Garnish and Serve: Sprinkle the fresh parsley over the top for a vibrant garnish. Serve the sausages and peppers hot, with the accompanying sauce. Enjoy this comforting meal with bread or pasta for a complete experience!
