Ingredients
  

  • 12 pieces lasagna noodles cooked al dente
  • 1 jar pasta sauce
  • 1 lb Italian sausage casings removed
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 pinch red pepper flakes
  • 2 cups ricotta cheese
  • 3 cups mozzarella cheese divided
  • 1.25 cups Parmesan cheese
  • 0.5 cup fresh parsley chopped
  • 2 large eggs

Instructions
 

  • Preheat oven to 350°F.
  • Brown sausage in a skillet, then add onion and cook until soft. Stir in garlic and red pepper flakes.
  • Mix ricotta, mozzarella, Parmesan, parsley, eggs, salt, and pepper in a bowl.
  • Spread cheese mixture onto each noodle, then add sausage mixture.
  • Roll noodles and place seam-side down in a baking dish with sauce on the bottom.
  • Top with remaining sauce and mozzarella.
  • Cover with foil and bake for 30 minutes.
  • Broil uncovered for a few minutes until cheese is bubbly and golden.

Notes

Let the sausage cool slightly before assembling. Garnish with fresh basil for the best flavor.
