Ingredients
  

  • 1 center-cut pork loin roast about 3 to 4 pounds
  • 1 packet dry onion soup mix about 1 ounce; use a regular packet
  • 1 cup chicken broth
  • 1 cup barbecue sauce use your preferred variety

Instructions
 

  • Place the raw center-cut pork loin roast in the bottom of the slow cooker.
  • Sprinkle the dry onion soup mix evenly over the top of the pork.
  • Pour the chicken broth around the roast, then spoon the barbecue sauce over the top.
  • Cover the slow cooker and cook on low for 6 to 8 hours, until the pork is tender and reaches a safe internal temperature.
  • Begin checking near the 6-hour mark if your slow cooker tends to run hot, because lean pork loin can dry out if overcooked.
  • Transfer the cooked pork to a cutting board and let it rest for 10 minutes before slicing.
  • Slice the pork and serve it with the cooking juices spooned over the top.

Notes

Store leftover sliced pork with some of its cooking juices in a covered container in the refrigerator. Reheat gently with a little cooking liquid in a covered skillet or in the microwave. Leftovers are excellent in sandwiches with extra sauce and coleslaw.
