Ingredients
  

  • 1 whole chicken 4–5 pounds, thawed, giblets removed
  • 2 tsp kosher salt or 1 1/2 tsp table salt
  • 1 tsp black pepper
  • 2 tsp Italian seasoning dried
  • 1 yellow onion large, sliced into thick rounds

Instructions
 

  • Ensure the chicken is fully thawed. Slice onion into thick rounds and arrange in a single layer at the bottom of the slow cooker.
  • Pat chicken dry inside and out. Season all over with salt, pepper, and Italian seasoning, including inside the cavity.
  • Tuck wing tips under and place chicken breast-side up on top of the onions.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3.5–4.5 hours without lifting the lid.
  • Check that the internal temperature reaches 165°F at the thickest part of the thigh.
  • Carefully transfer chicken to a platter, rest for 10 minutes, then serve with onions and juices from the slow cooker.

Notes

Add half a lemon inside the cavity for extra aroma. Broil briefly after cooking for crispy skin if desired.
