Instructions
Ensure the chicken is fully thawed. Slice onion into thick rounds and arrange in a single layer at the bottom of the slow cooker.
Pat chicken dry inside and out. Season all over with salt, pepper, and Italian seasoning, including inside the cavity.
Tuck wing tips under and place chicken breast-side up on top of the onions.
Cover and cook on LOW for 6–8 hours or HIGH for 3.5–4.5 hours without lifting the lid.
Check that the internal temperature reaches 165°F at the thickest part of the thigh.
Carefully transfer chicken to a platter, rest for 10 minutes, then serve with onions and juices from the slow cooker.
Notes
Add half a lemon inside the cavity for extra aroma. Broil briefly after cooking for crispy skin if desired.
