Amish Onion Fritters

Amish onion fritters: chopped onions in a thick batter of flour, cornmeal, sugar, baking powder and milk, dropped by the tablespoon into 350 to 375°F oil and fried until brown and crisp. Serves 6.

Ingredients
  

  • 3/4 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornmeal
  • 2 teaspoons baking powder
  • 1 to 2 teaspoons salt or to taste
  • 3/4 cup milk
  • 2 1/2 cups onions chopped; about 1 1/2 medium onions
  • oil for frying about 1/2 inch deep in the skillet

Instructions
 

  • Mix the flour, sugar, cornmeal, baking powder and salt in a bowl. Add the milk and stir. The batter will be thick.
  • Add the chopped onions and mix thoroughly.
  • Heat 1/2 inch of oil in a skillet over medium-high heat to 350 to 375°F.
  • Drop the batter by tablespoons into the hot oil and flatten each one slightly. Leave room between them and fry in batches. Brown on both sides until crisp, about 3 to 4 minutes per side.
  • Lift the fritters out with a slotted spoon and drain them on paper towels. Serve warm.

Notes

Leftovers: refrigerate within 2 hours, eat within 3 to 4 days; reheat in the oven or a skillet to 165°F.
