Apple Fritters

Fried apple fritters made with a quick cinnamon batter, diced fresh apples and a vanilla powdered sugar glaze. No yeast.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/3 cup milk for the batter
  • 2 eggs
  • 3 tablespoons applesauce
  • 2 large Granny Smith or Honeycrisp apples peeled, cored and diced
  • canola oil or vegetable oil enough for a depth of 1 1/2 inches, for frying
  • 2 cups powdered sugar for the glaze
  • 1/4 cup milk for the glaze
  • 1/2 teaspoon vanilla extract for the glaze

Instructions
 

  • Whisk the flour, sugar, baking powder, salt and cinnamon in a medium bowl. Make a well in the center; add the 1/3 cup milk, eggs and applesauce. Stir just to combine, then fold in the diced apples.
  • Heat 1 1/2 inches of oil in a heavy skillet, Dutch oven or deep fryer to 375°F.
  • Drop about 1/4 cup batter per fritter into the oil, spreading it out as you drop it. Fry until golden brown, approximately 2 minutes per side. Remove with a slotted spoon and drain on paper towels.
  • Whisk the powdered sugar, 1/4 cup milk and vanilla extract. Dunk each fritter, turning to coat both sides, then place on a wire rack to drip and air-dry.

Notes

Watch the oil temperature and adjust the heat to stay at 375°F: cooler oil makes greasy fritters, hotter oil browns them before the center cooks. Frying oil absorbed by the fritters is not counted in the nutrition. Refrigerate leftovers within 2 hours and eat within 3 to 4 days.
