Asian Pork (Crock Pot Recipe)

Ingredients
  

  • 4.5 lbs pork shoulder or pork butt
  • 2 tbsp vegetable oil
  • 2 tbsp sesame oil toasted
  • 2 tbsp ground ginger
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 0.5 cup coconut milk full-fat
  • 0.5 cup soy sauce reduced sodium
  • 0.33 cup mirin
  • 0.25 cup sweet chili sauce
  • 2 tbsp fish sauce
  • 1 tbsp Sriracha
  • 1 tbsp cornstarch
  • 1.25 cups brown sugar packed
  • 0.25 cup water

Instructions
 

  • Mix sesame oil, ginger, garlic powder, salt, onion powder, and pepper. Rub all over pork.
  • Sear pork in hot oil until browned on all sides.
  • Place pork in slow cooker.
  • Mix coconut milk, soy sauce, mirin, chili sauce, fish sauce, Sriracha, and cornstarch. Pour over pork.
  • Cook on LOW for 8–10 hours or HIGH for 5–6 hours until tender.
  • Remove pork, shred, and reserve 2½ cups of cooking liquid.
  • Cook brown sugar and water for 1 minute, then whisk in reserved liquid and simmer until thick.
  • Pour sauce over shredded pork and toss to coat.

Notes

Serve over rice, noodles, or in lettuce wraps. Extra sauce can be stored and used later.
