BBQ Sloppy Joes

Ingredients
  

  • 1 1/2 pounds ground beef
  • 1/2 onion finely chopped
  • 1/2 red bell pepper finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup barbecue sauce
  • 1/4 cup ketchup
  • 1/2 cup water
  • 6 hamburger buns
  • 1 cup cheddar cheese shredded

Instructions
 

  • In a medium skillet over medium heat, cook the ground beef until browned and no longer pink (160°F). Drain off any excess grease.
  • Add the onion, red bell pepper, salt and black pepper. Cook until the vegetables are softened.
  • Stir in the barbecue sauce, ketchup and water and mix well to combine.
  • Reduce the heat to low and cook uncovered for 5 to 10 minutes, stirring occasionally, until the flavors are well combined.
  • Serve the mixture on the hamburger buns and top with the shredded cheddar.

Notes

Barbecue sauce is salty, so taste before adding more salt. Refrigerate leftovers within 2 hours and eat within 3 to 4 days, or freeze; reheat to 165°F.
