Ingredients
  

  • 1 pound breakfast sausage
  • 12 eggs
  • 2 cups cheddar cheese shredded
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 32 ounces tater tots frozen; arrange on top without overlapping

Instructions
 

  • Heat the oven to 350°F and grease a 9-by-13-inch baking dish.
  • Cook the breakfast sausage in a skillet, breaking it into crumbles. Check that ground pork sausage reaches 160°F with a food thermometer, then drain it.
  • Whisk the eggs in a large bowl. Stir in the cheddar cheese, milk, salt, pepper and cooked sausage. Pour the mixture into the baking dish.
  • Arrange the frozen tater tots over the filling without overlapping them. Keep their tops above the egg mixture rather than submerging them.
  • Bake at 350°F for 55 to 60 minutes, until the tater tots are golden and the eggs are set. Check the center with a food thermometer; the casserole must reach 165°F before serving.

Notes

Place frozen tots on top with their tops partly exposed for browning. Refrigerate leftovers within 2 hours in shallow, covered containers; refrigerate for 3 to 4 days or freeze for 3 to 4 months. Reheat leftovers to 165°F.
