Cattle Drive Casserole

A cheddar biscuit crust topped with taco beef, fire-roasted tomatoes and green chiles, a creamy sour cream and Colby Jack layer and more cheese. Serves 8.

Ingredients
  

  • 1 box Cheddar Bay biscuit mix about 11.36 ounces, with its seasoning packet
  • 3/4 cup cold water for the biscuit mix
  • 1 pound ground beef
  • 1 medium onion diced
  • 1 packet taco seasoning
  • 1/4 cup water for the taco seasoning
  • 14.5 ounces fire-roasted diced tomatoes 1 can, drained
  • 4 ounces diced green chiles 1 can, undrained
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cups shredded Colby Jack cheese divided
  • 1 teaspoon dried parsley flakes optional, for topping

Instructions
 

  • Preheat the oven to 375°F. Lightly spray a 9x13-inch casserole dish with nonstick cooking spray.
  • In a medium bowl, mix the biscuit mix, including its seasoning packet, with 3/4 cup cold water until just combined. Spread the dough evenly over the bottom of the dish; if it is too sticky, spray your clean hands lightly and press it out.
  • Bake for 5 to 8 minutes, just until the dough is set. Set it aside.
  • In a large skillet over medium heat, cook the ground beef with the onion, breaking up the meat, until browned and fully cooked (160°F). Drain any excess grease.
  • Stir in the taco seasoning, 1/4 cup water, the drained tomatoes and the green chiles. Simmer for 2 to 3 minutes, stirring occasionally.
  • Spread the beef mixture evenly over the par-baked crust. In a small bowl, combine the mayonnaise, sour cream and 1 cup of the cheese and spread it over the beef. Sprinkle the remaining 1 cup of cheese over the top.
  • Bake for 30 minutes, until the top is melted and bubbly and the center reaches 165°F. Let it cool for 5 minutes and sprinkle with the parsley before serving.

Notes

Par-bake the crust just until set so it doesn't go soggy. With plain biscuit mix, use 2 1/2 cups with 1 cup water and add 1 teaspoon garlic powder to the sour cream layer. Refrigerate leftovers within 2 hours and eat within 3 to 4 days; reheat to 165°F.
