Ingredients

  • 4 slices bacon cooked and chopped
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground mustard
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons dill pickle juice
  • 2 pounds frozen diced hash browns southern-style, do not thaw
  • 1 cup sour cream
  • 10 ounces condensed cheddar cheese soup 1 can, undiluted
  • 2 cups Colby Jack cheese shredded and divided
  • 2 green onions chopped

Instructions

  • Heat the oven to 400°F and spray a 9x13-inch baking dish with cooking spray.
  • Cook 4 slices of bacon, drain them well and chop them into small pieces. Set aside.
  • Heat a large skillet over medium-high heat. Brown the ground beef, breaking it up, until it is no longer pink and reaches 160°F. Season with the salt, pepper, ground mustard, onion powder, garlic powder and smoked paprika, then drain off the extra grease.
  • Stir in the ketchup, mustard and dill pickle juice and take the skillet off the heat.
  • In the baking dish, combine the frozen hash browns, the seasoned beef, the sour cream, the cheddar soup and 1 cup of the Colby Jack. Mix well and spread it out evenly.
  • Sprinkle the remaining 1 cup of Colby Jack over the top, then the chopped bacon.
  • Cover with foil and bake for 1 hour. Remove the foil and bake a few minutes more to brown the cheese, until the potatoes are tender and the center reaches 165°F.
  • Top with the chopped green onions. Serve with ketchup, pickles or a burger sauce.

Notes

No need to thaw the hash browns. For a browner top, broil about a minute at the end and watch it. Refrigerate leftovers within 2 hours and eat within 3 to 4 days; reheat to 165°F.
