Ingredients

  • 4 cups cooked chicken diced or shredded; leftover or rotisserie chicken works
  • 1 can cream of chicken soup 22.6 ounces
  • 1/2 cup sour cream
  • 1 can corn 15.25 ounces, drained
  • 1 can Ro-tel diced tomatoes and green chilies 10 ounces, drained
  • 3 cups shredded pepper jack cheese divided: 2 cups in the filling and 1 cup on top
  • 2 cups Nacho Cheese Doritos crushed

Instructions

  • Heat the oven to 350°F.
  • In a large bowl, mix the cream of chicken soup, sour cream, corn, Ro-tel, chicken and 2 cups of the pepper jack.
  • Spread the mixture into an 8x8 or 9x9 baking pan. Set the pan on top of a baking sheet to prevent spills in your oven.
  • Sprinkle the remaining 1 cup of pepper jack over the casserole, then spread the crushed Doritos evenly over the cheese.
  • Cover the pan with foil and bake for 25 minutes.
  • Remove the foil and bake another 15 minutes, until the cheese is melted and bubbly at the edges and the center of the casserole reaches 165°F on a food thermometer.

Notes

Leftovers: refrigerate within 2 hours, eat within 3 to 4 days. Reheat covered to 165°F; add fresh crushed chips after reheating.
