Ingredients
  

  • 3 chicken breasts boneless, skinless
  • 2 tsp Italian seasoning or Herbes de Provence
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 2 tbsp butter divided
  • 2 tbsp olive oil divided
  • 1/2 lb baby potatoes halved or quartered
  • 1 tbsp butter
  • 1 tsp garlic minced
  • 1 cup chicken broth low sodium
  • 2 tbsp Dijon mustard
  • 1 cup heavy cream
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or more to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Toss chicken and potatoes with olive oil, salt, pepper, and seasoning until coated.
  • Heat butter and oil in a skillet. Sear chicken and potatoes until golden, flipping chicken once.
  • Remove from skillet and set aside.
  • Melt butter, cook garlic, then whisk in broth, Dijon, and cream. Season and simmer.
  • Return chicken and potatoes, spoon sauce over, and transfer skillet to oven.
  • Bake 15–20 minutes until chicken is cooked through and potatoes are tender.
  • Spoon sauce over and finish with extra pepper before serving.

Notes

Add spinach or mushrooms for extra flavor, or use chicken thighs for a juicier dish.
