Ingredients
  

  • 1.5 lbs baby potatoes cut into chunks
  • 2 lbs chicken breasts boneless, skinless, cubed
  • salt and pepper to taste
  • 1/2 cup ranch dressing divided
  • 2 cups Mexican cheese blend shredded
  • 1 cup bacon cooked and crumbled
  • 1/2 cup green onions diced

Instructions
 

  • Preheat oven to 450°F and grease a 9x13 baking dish.
  • Toss potatoes with half the ranch dressing, salt, and pepper. Spread in dish.
  • Bake potatoes for 30 minutes, stirring halfway through.
  • Toss chicken with remaining ranch dressing.
  • Add chicken over potatoes, cover with foil, and bake 20 minutes until cooked through.
  • Top with bacon, cheese, and green onions.
  • Bake uncovered 10 minutes until cheese is melted and bubbly.

Notes

For extra crispiness, broil for 2–3 minutes at the end. Make sure chicken reaches 165°F internal temperature.
