Ingredients
  

  • 1/2 cup onion diced
  • 1 red bell pepper diced
  • 1 cup brown rice uncooked
  • 3 tbsp fajita seasoning
  • 1/8 tsp cayenne pepper optional
  • 1 cup corn frozen
  • 14 oz black beans drained
  • 5 cups chicken cooked and shredded
  • 3 cups chicken broth
  • 4 oz green chilies
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 1/4 cups Monterey Jack cheese shredded

Instructions
 

  • Preheat oven to 400°F and prepare a 9x13 baking dish.
  • Combine onion, bell pepper, rice, seasoning, and cayenne in the dish.
  • Whisk broth, green chilies, tomato paste, and oil, then pour over mixture.
  • Add chicken, beans, and corn. Stir to combine.
  • Cover tightly with foil and bake 65–70 minutes until rice is tender.
  • Top with cheese and bake uncovered 5–10 minutes until melted.
  • Let rest before serving.

Notes

Ensure the dish is tightly covered during baking so the rice cooks evenly. If still liquidy, bake a bit longer until absorbed.
