Chocolate Banana Bread

Ingredients
  

  • 3 medium bananas ripe, mashed
  • 2 eggs
  • 1/4 cup almond butter or peanut butter
  • 1/3 cup monk fruit sweetener or brown sugar
  • 1 tsp vanilla extract
  • 1 pinch salt or slightly more to taste
  • 1 1/2 cups oat flour
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/4 cup dark chocolate chips plus more for topping if desired

Instructions
 

  • Preheat the oven to 350°F and line a standard loaf pan with parchment paper, leaving overhang on the sides.
  • In a large bowl, mash the bananas until very smooth.
  • Whisk in the almond butter and eggs. Add the sweetener, vanilla extract, and salt, and whisk until fully combined.
  • Stir in the oat flour, cocoa powder, and baking powder just until the batter comes together.
  • Fold in the dark chocolate chips.
  • Transfer the batter to the prepared loaf pan, smooth the top, and add extra chocolate chips if desired.
  • Bake for 30 to 40 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  • Cool in the pan for 15 minutes, then remove and let cool fully on a wire rack before slicing.

Notes

Use brown sugar for a sweeter, more classic loaf, or monk fruit sweetener for a lower-sugar version. Peanut butter also works well in place of almond butter.
