Ingredients
  

  • 1 bag frozen popcorn chicken about 26 ounces
  • 4 cups mashed potatoes prepared: 2 packages instant, store-bought or homemade
  • 10 ounces frozen corn 1 bag
  • 2 cups cheddar cheese shredded
  • 10.5 ounces brown gravy 1 can
  • chives or scallions chopped, optional

Instructions
 

  • Heat the oven and bake the popcorn chicken according to the package directions, until hot and crisp all the way through (165°F).
  • Bring a pot of water to a boil and make the instant mashed potatoes according to the pouch directions, or warm 4 cups of homemade mashed potatoes.
  • While the chicken and potatoes cook, cook the frozen corn, heat the gravy and shred the cheese.
  • Divide the mashed potatoes among 4 bowls in a generous layer. Top with the corn, then the popcorn chicken and the cheddar, and smother each bowl with gravy.
  • Sprinkle with chopped chives or scallions if you like and serve right away, while everything is hot.

Notes

Store the chicken, potatoes, corn and gravy separately and build only the bowls you will eat. Refrigerate within 2 hours and eat within 3 to 4 days, or freeze 3 to 4 months; reheat to 165°F and bring gravy to a rolling boil.
