Crack Chicken Casserole

Cooked chicken, bacon, cheddar and dry ranch seasoning in sour cream and cream of chicken soup, baked under buttered cracker crumbs. Serves 6.

Ingredients
  

  • 4 cups cooked chicken chopped
  • 1 ounce ranch seasoning mix 1 package, dry
  • 1 1/2 cups cheddar cheese shredded
  • 1 cup bacon cooked and chopped
  • 1 1/2 cups sour cream
  • 1 can cream of chicken soup 10.5 ounces
  • 1 1/2 cups plain crackers crushed
  • 1/4 cup unsalted butter melted

Instructions
 

  • Preheat the oven to 350°F. Lightly coat a 9x9-inch baking dish with cooking spray.
  • In a large bowl, combine the chopped chicken, ranch seasoning mix, shredded cheddar, chopped bacon, sour cream and cream of chicken soup. Stir until everything is well mixed.
  • Transfer the chicken mixture to the baking dish and spread it out evenly.
  • In a small bowl, mix the crushed crackers with the melted butter until the crumbs are evenly moistened. Sprinkle them over the chicken layer.
  • Bake uncovered for 30 to 40 minutes, until the casserole is bubbly, the topping is golden brown and the center reaches 165°F on a food thermometer.

Notes

Use dry ranch seasoning mix, not bottled dressing. A 2-quart dish or a 9x13-inch pan also works. Refrigerate leftovers within 2 hours and eat within 3 to 4 days or freeze 3 to 4 months; reheat covered to 165°F.
