Ingredients
  

  • 1 pound ground beef
  • 2 tablespoons taco seasoning one package
  • 1 can refried beans 15 ounces; use only enough for a thin layer
  • 1 can crescent roll dough 8 ounces
  • 2 cups Mexican-blend cheese shredded

Instructions
 

  • Heat the oven to 350°F. Grease a 9x13-inch baking dish with nonstick cooking spray.
  • Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks. Check that it reaches 160°F with a food thermometer; drain if needed. Add the taco seasoning and cook according to its package directions.
  • Unroll the crescent dough in the prepared dish and press the seams together to seal them.
  • Warm the refried beans so they are easier to spread. Dollop them onto the dough and spread gently in a thin layer, leaving a border around the edge. You may not need the whole can.
  • Spread the seasoned beef over the beans, then top with the shredded cheese.
  • Bake for 25 to 30 minutes, until the outer crust is golden brown. Check the center of the casserole with a food thermometer; it should reach 165°F.
  • Let cool for 5 minutes, then slice into squares. Serve with shredded lettuce, diced tomatoes, sliced olives, or sour cream if desired.

Notes

The listed 40-minute total does not include the separate 5-minute cooling step; baking may take up to 30 minutes. Refrigerate leftovers within 2 hours in shallow, covered containers. Keep refrigerated leftovers for 3 to 4 days or frozen leftovers for 3 to 4 months. Thaw in the refrigerator, cold water, or microwave, not on the counter. Reheat leftovers to 165°F.
