Ingredients

  • 16 ounces penne pasta 1 box
  • 2 tablespoons olive oil
  • 3 cups chicken breasts cubed; a little less than 3 cups is fine
  • salt and black pepper to taste, for the chicken
  • 2 jars Alfredo sauce 15 ounces each
  • 8 ounces cream cheese 1 block, softened to room temperature
  • 1 cup whole milk
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mozzarella cheese shredded, divided
  • 1 cup Parmesan cheese grated, divided
  • fresh or dried parsley chopped, for garnish; optional

Instructions

  • Heat the oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray and set it aside.
  • Cook the penne according to the package directions until al dente. Drain and set aside.
  • Heat the olive oil in a medium skillet over medium heat. Add the cubed chicken, season with salt and black pepper, and cook, stirring occasionally, until golden and fully cooked; the chicken should read 165°F on a food thermometer. Set aside.
  • In a large bowl, mix the Alfredo sauce, softened cream cheese, milk, garlic, Italian seasoning, 1/2 teaspoon salt and 1/4 teaspoon black pepper until well combined.
  • Add the cooked penne and the chicken to the sauce and stir until well coated. Stir in 1 cup of the mozzarella and 1/2 cup of the Parmesan.
  • Pour the mixture into the prepared baking dish. Top with the remaining 1 cup mozzarella and 1/2 cup Parmesan.
  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for 10 minutes more, until the cheese is melted and bubbly and the center reaches 165°F on a food thermometer.
  • Let the casserole stand for 5 minutes. Garnish with parsley if you like and serve.

Notes

Leftovers: refrigerate within 2 hours, eat within 3 to 4 days. Stir in a splash of broth before reheating to 165°F.
