Ingredients

  • 1 tablespoon butter
  • 1 pound lean ground beef 93/7
  • 1 teaspoon garlic powder
  • 2 tablespoons all-purpose flour
  • 1 can condensed French onion soup 10.5 ounces
  • 1/3 cup beef broth beef stock, beef bone broth or low-sodium broth also work
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons ketchup
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 6 brioche buns any hamburger bun works; toast them if you like
  • 6 slices provolone cheese gruyere, mozzarella, muenster or Swiss also work

Instructions

  • Melt the butter in a skillet over medium heat. Add the ground beef and cook, crumbling it, until no pink remains, the meat is lightly browned and a food thermometer reads 160°F. Drain any excess grease from the skillet.
  • Sprinkle the garlic powder over the beef, stir well and cook for 30 seconds, until it is evenly distributed and fragrant.
  • Sprinkle the flour over the beef while stirring constantly, so the meat is evenly coated. Cook and stir for 1 minute to remove the raw flour taste.
  • Add the French onion soup, beef broth, Worcestershire sauce, ketchup, onion powder, dried thyme, kosher salt and black pepper. Stir until smooth and fully combined.
  • Simmer for 8 to 10 minutes, stirring occasionally, until the mixture is glossy, saucy and thick enough to mound slightly on the back of a spoon. If it gets too thick, stir in a splash of beef broth.
  • Use a slotted spoon to put the filling on the bottom half of each bun. Lay a slice of provolone on top, add the top bun and let the cheese melt slightly. Serve warm.

Notes

Store the filling without the buns: refrigerate within 2 hours and eat within 3 to 4 days, or freeze 3 to 4 months. Reheat covered to 165°F, then add the cheese.
