Fried Bologna Sandwiches with a Twist

Ingredients
  

  • 6 slices bologna
  • 4 slices bread
  • 2 tbsp mayonnaise
  • 2 slices tomato thick slices
  • 2 slices cheddar cheese
  • cooking spray

Instructions
 

  • Spread 1 tablespoon of mayonnaise on one side of two slices of bread. Place a thick slice of tomato on each slice and top with a slice of cheddar cheese.
  • Preheat a skillet over medium-high heat and spray with cooking spray. Cut an 'X' in the center of each bologna slice to prevent curling, then fry for 3-4 minutes on each side until caramelized.
  • Place three slices of fried bologna on each slice of bread topped with tomato and cheese.
  • Top each assembled sandwich with another slice of bread. Toast each side in the skillet until golden brown. Serve hot and enjoy the melty, crispy flavors.

Notes

For a spicier twist, add a dash of hot sauce or a few pickle slices.
