A Southern classic with a twist! This Fried Bologna Sandwich adds fresh tomato and melted cheddar, making it an irresistible combination of creamy, crispy, and savory flavors.
Spread 1 tablespoon of mayonnaise on one side of two slices of bread. Place a thick slice of tomato on each slice and top with a slice of cheddar cheese.
Preheat a skillet over medium-high heat and spray with cooking spray. Cut an 'X' in the center of each bologna slice to prevent curling, then fry for 3-4 minutes on each side until caramelized.
Place three slices of fried bologna on each slice of bread topped with tomato and cheese.
Top each assembled sandwich with another slice of bread. Toast each side in the skillet until golden brown. Serve hot and enjoy the melty, crispy flavors.
