Ingredients
  

  • 4 cod fillets 6 oz each
  • 2 tbsp olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 4 oz unsalted butter
  • 1 clove garlic minced
  • 1/2 lemon juice only
  • 3 tbsp fresh parsley finely chopped
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh chives chopped

Instructions
 

  • Pat the cod fillets dry with a paper towel. Season both sides generously with salt and freshly ground black pepper.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place cod fillets in the pan and cook for 3-4 minutes on each side until golden brown and cooked through.
  • Remove cod from the pan and set aside. In the same skillet, reduce heat to medium and add unsalted butter.
  • Once butter melts, add minced garlic and cook for 30 seconds until fragrant. Stir in parsley, dill, chives, and lemon juice.
  • Return cod to the skillet, spooning herb butter sauce over the fillets. Warm for 1-2 minutes and serve with extra sauce drizzled on top.

Notes

For a brighter flavor, garnish with extra lemon slices or fresh herbs.
