Ingredients

  • 1 pound bacon chopped
  • 4 to 6 jalapeno peppers seeded and diced
  • 1/2 cup onion diced
  • 2 teaspoons garlic minced
  • 1/2 cup all-purpose flour
  • 6 cups chicken broth low-sodium
  • 3 cups half-and-half
  • 6 Yukon gold potatoes peeled and chopped into 1-inch pieces
  • 8 ounces cream cheese softened and cut into pieces
  • 2 cups cheddar cheese shredded
  • kosher salt to taste
  • black pepper freshly ground, to taste
  • sliced jalapenos, bacon, green onion and shredded cheese for garnish

Instructions

  • In a large Dutch oven or pot, cook the chopped bacon over medium-high heat until crisp. Remove most of the bacon grease, leaving 2 tablespoons in the pot to cook the onion and jalapenos.
  • Add the diced jalapenos and the onion to the pot and cook for about 3 to 4 minutes, until tender.
  • Stir in the garlic and cook for 30 seconds more.
  • Add the flour and stir to make a paste.
  • Pour in the chicken broth and the half-and-half and whisk continually until mixed well.
  • Add the chopped potatoes. Heat the soup over medium-high heat and bring it to a boil. Reduce the heat to medium-low and simmer for about 25 to 30 minutes, until the potatoes are fork-tender, stirring occasionally.
  • Remove the pot from the heat, then add the cream cheese and the cheddar. Stir until the cheeses are melted and combined.
  • Season with kosher salt and black pepper to taste.
  • Garnish with sliced jalapenos, bacon, green onion and shredded cheese, and serve warm.

Notes

Seed the jalapenos for less heat. Refrigerate leftovers within 2 hours and eat within 3 to 4 days; it does not freeze well because of the dairy. Reheat to 165°F or a rolling boil, not in a slow cooker.
