Korean Ground Beef Stir Fry

Lean ground beef, red bell pepper, broccoli and carrots stir fried in one skillet with a brown sugar, soy, sesame, ginger and red pepper sauce. Serves 4.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound lean ground beef 90% lean
  • 1/2 cup yellow onion finely diced
  • 2 tablespoons garlic minced, about 5 to 6 cloves
  • 1 cup red bell pepper chopped, about 1/2 large pepper
  • 1 cup carrots julienned or shredded, about 1 large carrot
  • 2 cups broccoli florets cut into smaller florets, about 1 small head
  • 1/3 cup brown sugar
  • 1/3 cup reduced-sodium soy sauce or tamari for gluten-free
  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon ground ginger or 2 tablespoons fresh grated ginger
  • 1/2 teaspoon crushed red pepper flakes medium-mild heat; adjust to taste
  • green onions sliced, for garnish
  • toasted sesame seeds for garnish
  • cooked rice for serving, optional

Instructions
 

  • In a small bowl, whisk the brown sugar, soy sauce, rice vinegar, sesame oil, ginger and red pepper flakes until well blended. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat. When it is hot, add the ground beef and break it apart, then add the onion. Cook for about 5 to 7 minutes, crumbling the beef as it cooks, until it is browned. If your beef is less than 90% lean, drain off some of the fat before adding the vegetables.
  • Add the garlic, bell pepper, broccoli and carrots and stir fry for 2 minutes.
  • Pour in the sauce and cook, stirring often, for about 3 to 5 minutes, until the sauce reduces slightly and the beef reaches 160°F on a food thermometer.
  • Taste and add more soy sauce or red pepper flakes if needed. Take the skillet off the heat, garnish with green onions and sesame seeds, and serve on its own or over rice.

Notes

For more heat, add more red pepper flakes or 2 teaspoons of gochujang to the sauce. Refrigerate leftovers within 2 hours and eat within 3 to 4 days or freeze 3 to 4 months; reheat to 165°F.
