Lemon Pound Cake Cookies

Ingredients
  

  • 3/4 cup white sugar
  • 2/3 cup butter salted sweet cream butter, softened
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 eggs
  • 2 teaspoons lemon extract

Instructions
 

  • Preheat the oven to 400°F.
  • In a mixing bowl, combine the sugar and softened butter until light and fluffy.
  • In another bowl, whisk together the flour and baking powder.
  • Gradually stir the dry ingredients into the butter mixture. Add the eggs one at a time, mixing well, then mix in the lemon extract.
  • Place spoonfuls of dough on a baking sheet. Bake for about 10 to 12 minutes, until the cookies are lightly golden and spring back when touched.

Notes

Start checking at 10 minutes. The cookies should stay pale, with lightly golden edges.
