Meatloaf Burgers

Beef patties made from a seasoned meatloaf mix with onion, egg and cracker crumbs, browned in a skillet, topped with a brown sugar ketchup glaze and served on buns. Serves 4.

Ingredients
  

  • 1 pound lean ground beef
  • 1/2 cup onion chopped, about 1/2 a small onion
  • 1 large egg
  • 1/2 cup saltine cracker crumbs about 12 crackers, or dry bread crumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup ketchup for the patties
  • 1/3 cup ketchup for the glaze
  • 3 tablespoons light brown sugar for the glaze
  • 1 to 2 tablespoons oil for the skillet
  • 4 hamburger buns or potato or brioche buns
  • lettuce, tomato and pickles sliced, optional, for topping

Instructions
 

  • In a large bowl, combine the ground beef, onion, egg, cracker crumbs, oregano, garlic powder, salt, pepper and 1/3 cup of the ketchup. Mix with your hands just until everything is combined; do not overwork or squeeze the mixture.
  • Divide the mixture into 4 portions and shape each one into a patty about 4 inches wide and 3/4 inch thick.
  • In a small bowl, stir the remaining 1/3 cup ketchup and the brown sugar together until smooth.
  • Heat a large cast-iron skillet over medium heat and add 1 to 2 tablespoons of oil. When the oil is hot, carefully lay the patties in the skillet and cook for 5 to 7 minutes, until nicely browned on the bottom. Turn the heat down a little if they brown too quickly.
  • Flip the patties and right away spoon the glaze over the tops. Cook for about 5 minutes more, until a thermometer in the center of each patty reads 160°F.
  • Move the patties to a plate and let them rest for 5 minutes. Serve them on the buns with lettuce, tomato and pickles.

Notes

Use a skillet at least 12 inches across so the 4 patties fit in a single layer, or cook in batches. Refrigerate leftovers within 2 hours and eat within 3 to 4 days or freeze 3 to 4 months; reheat to 165°F.
