Meatloaf with Tomato Sauce

Old-fashioned meatloaf with tomato sauce mixed into the beef and a sweet, tangy tomato, brown sugar and mustard topping, baked to 160°F.

Ingredients
  

  • 1 1/2 pounds lean ground beef 93% lean or leaner
  • 1 can tomato sauce 8 ounces, divided
  • 1 cup soft bread crumbs
  • 1 egg
  • 1 small onion finely chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme leaves crushed
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon brown sugar packed
  • 1 teaspoon dry mustard

Instructions
 

  • Preheat the oven to 350°F. In a small bowl, stir together 1/4 cup of the tomato sauce, the brown sugar and the dry mustard. Set aside.
  • In a large bowl, combine the rest of the tomato sauce with the ground beef, bread crumbs, egg, onion, Worcestershire sauce, thyme, garlic salt and pepper. Mix thoroughly but lightly.
  • Shape the mixture into an 8x4 1/2-inch loaf on the rack of a broiler pan, keeping the top flat. Spread the topping over the loaf.
  • Bake for 1 hour, or until an instant-read thermometer in the center reads 160°F.
  • Let the meatloaf stand 10 minutes before slicing.

Notes

For a lighter topping color, bake the loaf plain for 30 minutes, then add the topping. Refrigerate leftovers within 2 hours and eat within 3 to 4 days; reheat to 165°F.
