Mini Meatloaf

Ingredients
  

  • 1/2 cup plain breadcrumbs
  • 1/4 cup milk
  • 1 teaspoon avocado oil or olive oil
  • 1/2 cup yellow onion finely chopped
  • 1/2 cup red bell pepper finely chopped
  • 2 cloves garlic minced
  • 1 pound lean ground beef
  • 1 large egg
  • 1 1/2 tablespoons ketchup for the meat
  • 1 tablespoon Worcestershire sauce for the meat
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup ketchup for the glaze
  • 1 tablespoon brown sugar for the glaze
  • 1 teaspoon yellow mustard for the glaze, or Dijon
  • 1 teaspoon Worcestershire sauce for the glaze
  • 1/2 teaspoon garlic powder for the glaze

Instructions
 

  • Preheat the oven to 375°F. Lightly grease a 12-cup muffin tin.
  • In a small bowl, mix the breadcrumbs and milk. Let them soak while you cook the vegetables.
  • Heat the oil in a small skillet over medium heat. Sauté the onion and bell pepper for 3 to 5 minutes, until softened. Add the garlic for the last 30 seconds, then take the pan off the heat and let it cool slightly.
  • In a large bowl, combine the ground beef, soaked breadcrumbs, cooked vegetables, egg, 1 1/2 tablespoons ketchup, 1 tablespoon Worcestershire sauce, Italian seasoning, smoked paprika, salt and pepper. Mix gently, just until combined.
  • Divide the mixture evenly among the 12 muffin cups and press down gently to shape them.
  • Whisk the glaze ingredients together. Spoon a little onto each mini meatloaf and spread it into a thin layer with the back of the spoon.
  • Bake for 20 to 25 minutes, until cooked through and the center of a meatloaf reads 160°F. Let them cool for 5 minutes before removing them from the tin.

Notes

Grease the tin well and don't pack the meat. Refrigerate leftovers within 2 hours and eat within 3 to 4 days, or freeze 3 to 4 months; reheat to 165°F.
