Ingredients
  

  • 6 cups milk
  • 3/4 cup jasmine rice
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract

Instructions
 

  • Stir the milk, rice, sugar, cinnamon and salt together in a large heavy-bottomed pot.
  • Bring the mixture to a boil over high heat, then reduce the heat to a low simmer so it does not boil over.
  • Cook uncovered, stirring frequently, for about 30 to 35 minutes, until thick and creamy. Stir constantly during the last 5 to 10 minutes so the pudding does not stick to the bottom.
  • Remove from the heat and stir in the vanilla extract.

Notes

The pudding thickens more as it cools. Serve warm or chilled. Refrigerate leftovers within 2 hours.
