Pecan Pralines

Creamy Southern candy made by cooking granulated sugar, brown sugar, milk and butter with pecans to 238 to 240°F, then stirring until cloudy and spooning onto parchment.

Ingredients
  

  • 1 1/2 cups granulated sugar
  • 3/4 cup brown sugar packed
  • 1/2 cup whole milk
  • 6 tablespoons salted butter
  • 1 1/2 cups pecans roughly chopped
  • 1 teaspoon vanilla extract

Instructions
 

  • Combine the granulated sugar, brown sugar, whole milk and butter in a large pot. Cook over medium-high heat, stirring occasionally.
  • When the mixture boils, stir constantly and add the pecans. Let it boil for 3 minutes, until a candy thermometer registers 238 to 240°F.
  • Remove the pot from the heat and stir in the vanilla. Keep stirring until the syrup becomes creamy and cloudy and starts to thicken.
  • Drop spoonfuls onto parchment paper and let them cool.

Notes

If the mixture hardens before you finish spooning, stir in hot water a teaspoon at a time. The total does not include cooling time.
