Ingredients
  

  • 2 1/2 cups rolled oats or quick oats
  • 1 cup pumpkin puree not pie filling
  • 3 tbsp maple syrup or agave or coconut sugar
  • 2 tsp pumpkin pie spice or cinnamon
  • 1/2 cup chocolate chips dairy-free optional
  • 1 pinch salt

Instructions
 

  • Preheat oven to 350°F.
  • In a large bowl, combine all ingredients and mix until a thick dough forms.
  • Adjust sweetness or spices to taste if needed.
  • Shape dough into 12 cookies and place on a baking sheet.
  • Bake for 10 minutes until set and lightly golden on the bottom.
  • Let cool on the pan for a few minutes before serving.

Notes

These cookies won’t spread during baking, so shape them exactly how you want before placing them in the oven. Add extra oats if the dough feels too wet.
