Instructions
Add feta cheese and Greek yogurt to a food processor and blend until smooth and creamy, scraping down the sides as needed.
Add pumpkin puree, honey, thyme, and black pepper, then blend until fully combined and silky.
Taste and adjust sweetness or herbs as desired.
Transfer to a bowl, cover, and refrigerate for 30 to 60 minutes to allow flavors to develop.
Stir, then spoon into a serving dish and top with walnuts, thyme, and a drizzle of honey.
Notes
Toast walnuts for extra depth or skip for a smoother texture. Add chili flakes for a slight heat contrast.
