Ingredients
  

  • 200 g feta cheese block in brine preferred
  • 1/3 cup Greek yogurt
  • 1/2 cup pumpkin puree unsweetened
  • 2 tbsp honey plus more for topping
  • 1 tsp fresh thyme or 1/2 tsp dried
  • 1/4 tsp black pepper
  • 1/4 cup walnuts chopped, optional

Instructions
 

  • Add feta cheese and Greek yogurt to a food processor and blend until smooth and creamy, scraping down the sides as needed.
  • Add pumpkin puree, honey, thyme, and black pepper, then blend until fully combined and silky.
  • Taste and adjust sweetness or herbs as desired.
  • Transfer to a bowl, cover, and refrigerate for 30 to 60 minutes to allow flavors to develop.
  • Stir, then spoon into a serving dish and top with walnuts, thyme, and a drizzle of honey.

Notes

Toast walnuts for extra depth or skip for a smoother texture. Add chili flakes for a slight heat contrast.
