Sheet Pan Meatloaf and Potatoes

A 2-pound beef meatloaf with a ketchup and brown sugar glaze, baked on one foil-lined sheet pan with Yukon gold potatoes roasting around it. Serves 8.

Ingredients
  

  • 2 pounds ground beef 80% to 90% lean
  • 1/2 cup panko breadcrumbs
  • 1/3 cup beef broth or milk
  • 2 large eggs whisked
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup for the meatloaf
  • 1 1/4 teaspoons kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon garlic powder for the meatloaf
  • 1 teaspoon onion powder
  • 2/3 cup ketchup for the glaze; or BBQ sauce, or half and half
  • 2 to 3 tablespoons light brown sugar for the glaze
  • 1 pound Yukon gold potatoes cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder for the potatoes
  • salt and pepper to taste, for the potatoes
  • fresh parsley chopped, for garnish

Instructions
 

  • Heat the oven to 375°F. Line a large baking sheet with foil and lightly spray it with nonstick spray.
  • In a large bowl, mix the ground beef, panko, broth, eggs, Worcestershire sauce, 2 tablespoons of ketchup, salt, pepper, garlic powder and onion powder just until combined. Stir in some chopped parsley if you like. Don't overmix, or the meatloaf won't be as tender.
  • Shape the mixture into a loaf in the middle of the pan, leaving room around it for the potatoes.
  • Stir the 2/3 cup ketchup and the brown sugar together and spread it over the top of the loaf. Sprinkle with a little black pepper if you like.
  • Bake the meatloaf on its own for 10 minutes, then blot any juices on the pan with a paper towel.
  • Meanwhile, toss the potatoes with the olive oil, 1/2 teaspoon garlic powder, salt and pepper. Spread them around the meatloaf in a single layer, not touching it, with a little space between the pieces so they roast instead of steam.
  • Bake 40 minutes more, tossing the potatoes halfway through, until the potatoes are tender and a thermometer in the center of the meatloaf reads 160°F.
  • Let the meatloaf rest 5 minutes before slicing. Season the potatoes with salt if needed and sprinkle with chopped parsley.

Notes

Mix the meat and the glaze ahead and keep them covered in the refrigerator until baking. Refrigerate leftovers within 2 hours and eat within 3 to 4 days, or freeze the meatloaf slices (not the potatoes) for 3 to 4 months; reheat to 165°F.
