Ingredients

  • 2 pork tenderloins pork tenderloin About 2 to 2 1/2 pounds total
  • 1 packet onion soup mix 1-ounce standard packet
  • 12 ounces golden ale 1 bottle or can; use a mild ale rather than a strongly hoppy one

Instructions

  • Pat the pork tenderloins dry with paper towels and lay them in the bottom of your slow cooker.
  • Sprinkle the onion soup mix evenly over the pork tenderloins.
  • Pour the 12 ounces of golden ale around the pork, then put the lid on the slow cooker.
  • Cook on LOW for 2 1/2 to 3 1/2 hours, until the pork is tender and reaches 145°F in the thickest part. Start checking around the earlier end of the cooking window if your slow cooker runs hot.
  • Transfer the cooked pork tenderloins to a cutting board and let them rest for 5 to 10 minutes before slicing, spooning some of the hot cooking liquid over the top if desired.
  • Slice the pork into medallions and arrange them on a platter or dinner plates, then spoon plenty of the cooking juices over each serving.

Notes

Store leftover pork with some cooking juices in a covered container in the refrigerator for up to 3 or 4 days. Reheat gently in the microwave with a spoonful or two of broth, or in a covered skillet over low heat with some juices.
