Ingredients
  

  • 3 to 4 pounds beef brisket Trimmed of excess hard fat
  • 2 large yellow onions Thinly sliced
  • 2 1-ounce packets dry onion soup mix
  • 1 cup low-sodium beef broth

Instructions
 

  • Layer the thinly sliced onions evenly across the bottom of a 5- to 7-quart slow cooker; do not grease the cooker.
  • Sprinkle 1 packet of the dry onion soup mix over the onions.
  • Pat the brisket dry with paper towels, then place it fat-side up on top of the onions.
  • Sprinkle the second packet of dry onion soup mix evenly over the top of the brisket, pressing it lightly onto the surface.
  • Pour the beef broth around the sides of the brisket rather than directly over the top; the broth should come partway up the sides without covering the brisket.
  • Cover the slow cooker and cook on LOW for 8 to 10 hours, until the brisket is deeply tender and pulls apart easily with a fork.
  • Carefully transfer the tender brisket to a cutting board, tent it loosely with foil, and let it rest for 10 to 15 minutes before slicing.
  • While the brisket rests, stir the onions and cooking juices together in the slow cooker; if desired, leave the lid off, switch the cooker to HIGH, and reduce the gravy for 15 to 20 minutes.
  • Slice the brisket thickly across the grain.
  • Arrange the brisket on a warm platter or dinner plates, spoon the onions and dark gravy over the top, and serve hot with extra gravy for mashed potatoes, noodles, rice, or bread.

Notes

Cool leftovers within two hours and store them with some gravy in shallow containers in the refrigerator for 3 to 4 days. Reheat gently in a covered skillet or baking dish with a splash of gravy, or use the microwave at lower power. Freeze leftover brisket in portions with onions and gravy, thaw in the refrigerator, and warm slowly.
