Ingredients
  

  • 3 cups white chocolate chips
  • 1 can (14 ounces) sweetened condensed milk Use regular sweetened condensed milk, not evaporated milk.
  • 1 package (3 ounces) strawberry gelatin powder Use a standard 3-ounce package.
  • 1 tablespoon lime zest From about 1 to 2 limes.
  • as needed extra lime zest or coarse sea salt For topping, if desired.

Instructions
 

  • Line an 8-inch square pan or a loaf pan with parchment paper, leaving enough overhang to lift out the fudge later, and lightly grease the parchment if desired.
  • Add the white chocolate chips, sweetened condensed milk, and strawberry gelatin powder to the slow cooker.
  • Cover and cook on low for 30 to 45 minutes, checking once or twice, until the chocolate is softened and the mixture is warm without bubbling.
  • Stir the mixture until it is smooth, glossy, and evenly pink; if a few white chocolate lumps remain, cover and cook for 5 more minutes, then stir again.
  • Fold in the lime zest until evenly distributed.
  • Spread the warm fudge into the prepared pan and smooth the top with a spatula, then scatter extra lime zest or add a tiny pinch of coarse sea salt over the top if desired.
  • Refrigerate for 2 to 3 hours, until firm, then lift the fudge out using the parchment overhang and slice it into about 25 small squares.

Notes

Keep the fudge covered in the refrigerator for up to 1 week. It is best served cold and softens quickly at room temperature. For cleaner slices, use a sharp knife and wipe it between cuts. No reheating is needed; if very firm, let a square sit at room temperature for 5 to 10 minutes before eating.
