Ingredients
  

  • 2 pounds boneless, skinless chicken breasts About 4 to 5 medium pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets Fresh or frozen; do not thaw frozen broccoli
  • 1 10.5-ounce can cream of chicken soup Use regular condensed soup
  • 2 cups shredded cheddar cheese Divided; use sharp or mild cheddar

Instructions
 

  • Sprinkle both sides of the chicken breasts evenly with the salt and black pepper.
  • Lay the seasoned chicken breasts in the bottom of a 4- to 6-quart slow cooker in as even a layer as possible.
  • Spoon the cream of chicken soup over the chicken and spread it around gently so most of the chicken is covered, then sprinkle 1 1/2 cups of the cheddar over the soup and reserve the remaining 1/2 cup for the end.
  • Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 1/2 to 3 hours, until the chicken is cooked through and tender.
  • About 30 to 45 minutes before serving, stir in the broccoli florets and tuck them into the cheesy sauce around the chicken; if using frozen broccoli, separate large clumps without thawing, cover, and cook on HIGH for about 30 minutes until tender but still bright green.
  • Once the broccoli is tender, use two forks to shred the chicken directly in the slow cooker, stir it into the sauce and broccoli, and add more salt and pepper if needed.
  • Sprinkle the remaining 1/2 cup cheddar over the top, cover, and let it sit for 5 to 10 minutes until the cheese melts, then serve hot over rice, buttered egg noodles, or mashed potatoes.

Notes

Store leftovers in a covered container in the refrigerator for a few days. Reheat in the microwave in short bursts, stirring between them, and add a small splash of water if the sauce has thickened. The recipe can be frozen, but the sauce may be less smooth and the broccoli softer after thawing.
