Ingredients
  

  • 4 bone-in pork chops about 1 inch thick
  • 1 yellow onion thinly sliced
  • 1.5 cups stout beer
  • 0.33 cup brown sugar packed
  • 2 tbsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • neutral oil for optional searing

Instructions
 

  • Grease slow cooker and layer sliced onions on the bottom.
  • Whisk stout, brown sugar, and Dijon mustard.
  • Optional: sear pork chops until browned.
  • Place pork chops over onions and pour sauce on top.
  • Cook on LOW 6–7 hours or HIGH 3–4 hours.
  • Remove chops and reduce sauce in a pan until thick.
  • Return chops to sauce and spoon over before serving.

Notes

Searing adds deeper flavor, but you can skip it for convenience. Serve with mashed potatoes or crusty bread to soak up the sauce.
