Ingredients
  

  • 2 cups self-rising biscuit mix
  • 3/4 to 1 cup cold whole buttermilk Start with 3/4 cup and add more only as needed.
  • 1 1/2 cups cooked country ham Finely chopped, about 6 to 8 ounces, with excess fat trimmed away.

Instructions
 

  • Preheat the oven to 425°F and line a baking sheet with parchment paper, or lightly grease it.
  • Put the finely chopped cooked country ham in a small bowl and set it aside.
  • Add the self-rising biscuit mix to a medium mixing bowl, make a well in the center, and pour in 3/4 cup of the cold buttermilk.
  • Stir gently from the center outward using a fork or your hand until the dough begins to come together, adding more buttermilk a tablespoon at a time if dry pockets remain, until you have a soft, shaggy dough.
  • Sprinkle the chopped country ham over the dough and gently fold it in until it is distributed throughout.
  • Lightly dust the countertop or a large cutting board with biscuit mix, turn out the dough, and gently pat it into a rectangle about 1/2 to 3/4 inch thick.
  • Fold the dough in half like a book, then pat it back out to about 1/2 to 3/4 inch thick.
  • Cut the dough with a small round biscuit cutter about 1 1/2 to 2 inches wide, pressing straight down and lifting straight up without twisting.
  • Gather the scraps gently, pat them together, and cut more biscuits until all the dough is used.
  • Arrange the biscuits on the prepared baking sheet so they are just barely touching.
  • Bake on the center rack for 10 to 14 minutes, until the biscuits are puffed and deeply golden on top, with lightly caramelized bits where the ham meets the dough.
  • Let the biscuits rest on the pan for 5 minutes before moving them to a serving plate.

Notes

Let leftover biscuits cool completely, then store them in an airtight container in the refrigerator for up to 3 to 4 days. Because of the ham, do not leave them out longer than 2 hours. Reheat in a 300°F oven for 8 to 12 minutes, depending on size; the oven is preferable to the microwave for better texture.
