Ingredients

  • 1 pound lean ground beef
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 1 cup brown rice measure dry, then cook according to package directions before adding to the casserole
  • 1 can black beans
  • 3/4 cup crushed tomatoes
  • 1/2 cup salsa
  • 2 cups cheese grated; marble cheese or cheddar
  • 1/4 cup green bell pepper diced
  • salt and pepper to taste

Instructions

  • Warm a large nonstick skillet over medium heat. Add the ground beef, sprinkle with salt and pepper, and break it up as it cooks. Check that the beef reaches 160°F with a food thermometer.
  • While the beef cooks, prepare the brown rice according to its package directions. The rice must be cooked before it is mixed into the filling.
  • Transfer the cooked beef to a paper-towel-lined plate with a slotted spoon. Drain most of the fat from the skillet. Cook the onion, stirring frequently, until softened, about 3 to 5 minutes. Add the garlic and stir for 60 seconds, then return the beef to the skillet.
  • Stir the crushed tomatoes and salsa into the beef. Add the black beans and cooked rice, and stir to combine.
  • Heat the oven to 350°F and spray a 9x9-inch oven-safe casserole dish. Transfer the beef mixture to the dish, top with the grated cheese and sprinkle the diced green pepper over it.
  • Bake for 25 minutes, then broil for 2 to 3 minutes, until the cheese is bubbling. Check that the casserole reaches 165°F in the center before serving.

Notes

The rice is measured dry and cooked before it goes in. Salt and pepper have no set amounts and are not counted in the nutrition.
