Ingredients

  • 1 medium onion chopped
  • 2 medium carrots peeled and chopped; rough chopping is fine
  • 3 stalks celery chopped; rough chopping is fine
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1/4 teaspoon Italian seasoning or more to taste
  • 3 heaping tablespoons all-purpose flour
  • 6 cups chicken broth
  • 1 cup wild rice uncooked
  • 2 cups cooked turkey shredded or cut up; or more
  • 7 ounces cremini mushrooms sliced
  • salt and black pepper to taste
  • 1/2 cup heavy cream heavy or whipping; optional

Instructions

  • Chop the onion, carrots and celery; the carrots and celery only need a rough chop. Shred or cut up the cooked turkey and slice the mushrooms.
  • Heat the olive oil and butter in a large soup pot over medium-high heat. Add the onion, carrots and celery and sauté for 7 minutes, stirring occasionally.
  • Stir in the garlic, Italian seasoning and flour and cook for 1 to 2 minutes.
  • Whisk in the chicken broth until the flour is dissolved, then stir in the wild rice.
  • Turn the heat to high and bring the soup to a boil. Once it is just boiling, cover the pot with the lid slightly ajar and reduce the heat so the soup boils gently for 15 minutes.
  • Stir in the turkey and mushrooms. Turn the heat up until the soup just comes to a boil, then reduce it to a simmer and cook with the lid slightly ajar for 15 to 20 minutes more, until the rice is tender. Wild rice keeps a little chew. Check that the soup reaches 165°F on a food thermometer.
  • Stir in the cream if using it. Season with salt and pepper to taste and serve.

Notes

Refrigerate leftovers within 2 hours in shallow covered containers and eat within 3 to 4 days, or freeze 3 to 4 months (cream may separate). Reheat to a rolling boil (165°F).
