Zippy's Chili (Copycat)

A copycat of Hawaii's favorite chili: ground beef and Portuguese sausage simmered with beans, tomato paste and chili spices, finished with mayonnaise and served over rice. Serves 8.

Ingredients
  

  • 5 ounces Portuguese sausage half a stick; or chorizo
  • 1 large onion
  • 5 stalks celery
  • 1 large green bell pepper
  • 1 tablespoon neutral oil such as vegetable or avocado oil
  • 1 pound ground beef
  • 2 to 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 tablespoon dried oregano
  • 8 cloves garlic minced
  • 6 ounces tomato paste 1 can
  • 2 cups chicken broth
  • 15 ounces pinto beans 1 can, drained
  • 15 ounces kidney beans 1 can, drained
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 to 2 teaspoons kosher salt
  • 2 tablespoons mayonnaise Japanese-style or regular
  • cooked short grain white rice for serving

Instructions
 

  • Chop the Portuguese sausage in a small food processor until it has a texture similar to ground meat, or chop it by hand into very small pieces. Set aside.
  • Chop the onion, celery and green bell pepper very finely; the food processor works well here too.
  • Heat the oil in a big pot over medium-high heat. Add the chopped vegetables and sauté for 3 minutes.
  • Add the ground beef and the chopped Portuguese sausage and cook until the beef is browned and reaches 160°F, about 3 minutes.
  • Add the chili powder, cumin, paprika, oregano and garlic and sauté for 1 more minute. Add the tomato paste, mix well and sauté for 2 minutes.
  • Add the chicken broth, drained beans, Worcestershire sauce and bay leaves and stir gently. Cover and simmer for 1 hour.
  • Uncover, remove the bay leaves and taste. Add salt, starting with 1 teaspoon. Stir in the mayonnaise, taste once more, and serve over hot rice.

Notes

Serve over short grain white rice. Refrigerate leftovers within 2 hours and eat within 3 to 4 days, or freeze 3 to 4 months; reheat to a rolling boil.
