No-bake cornflake peanut butter cookies made with a quick stovetop syrup of sugar, light corn syrup and creamy peanut butter. Makes 36 cookies.

Ingredients
  

  • 6 cups cornflakes
  • 1 cup peanut butter creamy
  • 1 cup corn syrup light
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • sprinkles optional

Instructions
 

  • Line two baking sheets with wax or parchment paper. Put the cornflakes in a large bowl.
  • Combine the sugar, corn syrup and peanut butter in a large saucepan over medium-high heat. Stir as it cooks until the sugar melts and the mixture is smooth and comes to a boil.
  • Remove the saucepan from the heat and stir in the vanilla. Pour the mixture over the cornflakes and stir to coat them evenly.
  • Scoop 2-tablespoon portions, shape them into cookies and place them on the lined sheets. Add sprinkles immediately if you are using them.
  • Let the cookies cool completely before serving.

Notes

The total time does not include cooling. Have the cornflakes measured and the sheets lined before you heat the syrup.
