Fried Cabbage with Bacon, Onion, and Garlic

Ingredients
  

  • 1 pound bacon thick-cut, diced small
  • 1 small onion thinly sliced
  • 4 cloves garlic minced
  • 1 head cabbage cored and cut into bite-sized pieces
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon light brown sugar packed
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter salted

Instructions
 

  • In a Dutch oven or large, deep-sided skillet, cook the diced bacon over medium heat until crispy, about 12 to 15 minutes. Transfer it to a paper-towel-lined plate.
  • Leave 1/4 cup of the bacon fat in the pan. Add the sliced onion and cook, stirring occasionally, until translucent, about 10 minutes.
  • Stir in the minced garlic and cook until fragrant, about 30 seconds.
  • Add the cabbage, apple cider vinegar, brown sugar, seasoned salt and black pepper. Stir to combine, then cook, stirring occasionally, until the cabbage is tender, 10 to 15 minutes.
  • Return the bacon to the pan and add the butter. Stir until the butter melts and the bacon is distributed. Taste, adjust the seasoning if necessary, and serve immediately.

Notes

Keep 1/4 cup of bacon fat in the pan and pour off the rest. Add the bacon back only after the cabbage is tender so it stays crisp.
