Garlic Parmesan Roasted Shrimp

Ingredients
  

  • 1 lb large shrimp peeled and deveined, tails on
  • 2 tbsp olive oil
  • 3 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1/4 cup Parmesan cheese grated
  • to taste salt and black pepper
  • to taste fresh lemon juice
  • 2 tbsp chopped parsley

Instructions
 

  • Preheat your oven to 400°F (200°C) to ensure the shrimp roast quickly and evenly.
  • In a large bowl, combine 1 lb large shrimp (tails on), 2 tbsp olive oil, 3 tsp minced garlic, 1 tsp Italian seasoning, 1/4 cup grated Parmesan cheese, and salt and pepper to taste. Toss to coat the shrimp evenly.
  • Line a baking sheet with parchment paper. Place the shrimp in a single layer without overlapping. Bake for 10 minutes or until shrimp are pink and opaque, and the Parmesan is golden.
  • Remove from oven and squeeze fresh lemon juice over the shrimp. Garnish with 2 tbsp chopped parsley for added color and freshness.
  • Transfer the shrimp to a serving platter and serve hot. Perfect as an appetizer or paired with pasta, rice, or salad.

Notes

For a spicy twist, add a pinch of red pepper flakes to the shrimp mixture before roasting.
