Hobo Foil Packets

Ground beef patties baked in foil on a bed of potatoes, carrots and onion with a spoonful of cream of mushroom soup. Oven or campfire.

Ingredients
  

  • 1 pound lean ground beef
  • 1 packet dry onion soup mix 1 ounce
  • 4 small potatoes peeled and sliced
  • 2 cups carrots diced
  • 1 large onion sliced; or use 2 small onions
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt and black pepper to taste
  • 1 can condensed cream of mushroom soup 10.5 ounces; 2 tablespoons per packet
  • nonstick cooking spray for the foil

Instructions
 

  • Preheat the oven to 375°F.
  • Combine the ground beef and dry onion soup mix in a bowl. Form four patties and set aside.
  • In a large bowl, toss the potatoes, carrots, onion, olive oil, garlic powder, salt and black pepper until mixed.
  • Spray a 12-by-18-inch piece of foil with nonstick spray. Put one-fourth of the vegetable mixture in its center, top with one beef patty, and spoon 2 tablespoons of condensed mushroom soup over the patty. Repeat to make four packets.
  • Seal the packets well and place them beef side up on a large baking sheet. Bake for 35 to 45 minutes, until the potatoes and carrots are tender and the center of each ground-beef patty reaches 160°F on a food thermometer. Carefully open the packets to check.

Notes

Check both the vegetables (tender) and the beef (160°F). You need four 12-by-18-inch pieces of foil.
